Pickled Egg Sandwiches

Pickled Egg Sandwiches don't taste very nice. Mind you I don't really like they anyway, but thought they might taste ok with a bit of mayonaise so I made some for lunch yesterday. It was a good job that I made a ham and coleslaw sandwich as well other wise I would have been very hungry.

The Mushy Pea Experiment

I thought I would try making mushy peas from scratch to see if there is any difference to chip shop bought varieties. So I bought a packet of dried peas from the supermarket. Bachelor's quick soak peas cost 29p and a tin of mushy peas ready made costs about 35p. The instructions for dried mushy peas are as follows:

Soak the peas in boiling water with some bicarbonate of soda for two hours and then rinse. Ok, I soaked them for longer as I was in the process of cleaning the kitchen and Tim was fixing his car, but broke the torque wrench attachment so I had to drive him to Halfords to get a new part. So I must have soaked the peas for at least four hours.

Rinse the peas and add water and simmer for twenty minutes or until the peas are of a consistency desired (i.e mushy). But I think put too much water in it, or they had been soaked for too long, as it resembled pea soup for a long time so extra boiling was required and I overboiled the pan onto my newly cleaned hob.

Finally the peas were of the right consistency, but more smooth than mushy. I cooked some sausages and onions and mashed potatoes.

Verdict: They tasted nice, but a bit too smooth and not worth the bother of soaking, and simmering and cleaning the hob afterwards. Heating mushy peas splatters quite a lot.
