Lime Syrup Cake
Another experimental cake based on ingredients I had in my fridge and cupboard.
Ingredients
1 cup of sugar
3 cups of flour
3 cups of plain yoghurt
3/4 cup of sunflower oil
2 eggs
3 teaspoons of baking powder
zest and juice of 1 lime
2 tablespoons of rose water
1/2 cup of icing sugar
Method
Preheat the oven to gas mark 4 (180 C). Mix the sugar, baking powder, flour and lime zest together. Add the eggs, yoghurt and oil and beat into smooth paste. Bake in a lined baking tin for 45 mins or until the cake has risen and is golden brown. Then remove from oven. Mix the lime juice, rose water and icing sugar into a light syrup. Whilst the cake is still warm skewer the cake and pour the lime syrup over the cake. Serve the cake warm.
