Scotch Pancakes on Sunday
This morning, I decided to make some scotch pancakes.
Ingredients
1 egg
150 ml of milk
4oz self raising flour
2 oz of sugar
1/2 teaspoon cream of tarter
Method
Beat the milk and eggs together, add the sugar, flour and cream of tartar and mix until a smooth thick batter.
Heat and grease a frying pan under a medium heat and fry tablespoonfuls of the batter, flipping the pancakes over when they begin to bubble and browned.

Lemon Rose Cake
I've been experimenting in the kitchen to see what sort of cake I could make with weird ingredients in my cupboard. I wanted to make a walnut and coffee cake - but I didn't have any walnuts. I had some dates - but I wasn't sure if I wanted to try coffee and date cake. What I did have in my cupboard was a bottle of rose water and a jar of lemon curd - an interesting concept...
Lemon Rose Cake
Ingredients
4 oz of butter
2 oz of sugar
2 tablespoons of lemon curd
4 oz of self raising flour
2 eggs
1 tablespoon of rose water
Method
Preheat the oven to Gas Mark 4 or 180 degrees C.
Line and grease a 8 inc round baking tin.
Cream the butter, sugar and lemon curd together.
Beat in the eggs and rose water.
Fold in the flour
Pour the mixture into the baking tin
Bake for 15 - 20 minutes or until golden brown and risen
